Buffalo Chicken Nachos | Game Day Snack

If a plate loaded with cheesy, spicy buffalo chicken nachos is not game day heaven, then we don't know what is. Bound to keep any crowd happy and have them coming back for seconds!

A very creative (and surprisingly easy!) recipe by Rick Schultz of Cocktails and Q - this guy knows his stuff. Thank you Rick for sharing with everyone!

You Will Need

  • Corn Tortillas
  • Shredded Cheese
  • Refried Beans
  • Pre-Cooked and Breaded Chicken Strips
  • ½ cup Kosmos Q Buffalo Hot Wing Sauce
  • Ranch Dressing
  • Jalapeños to taste

The Cook

Making the perfect game day snack is an art in itself - and one should savor the journey as much as the destination. That's easy to do here - only a handful of ingredients, and barely as many steps before you can get your fingers dirty...

You can easily make these in your kitchen, or go all out and use a deep fryer (if you're doing bigger batches, this might be a good option). Either way, bring some olive oil up to 350ºF (177ºC).

Let's get the nachos out of the way first. Cut your corn tortillas in half, and fry until golden brown and crispy. That easy! Why would you ever use store bought chips? (Just kidding - you do whatever you like).

Next up, add the breaded chicken strips to the oil and let them go till they're cooked all the way through. Bring them off the heat, and let them cool down. When it's safe to do so, cut into bite-sized pieces.

The Payoff

Time to give these babies some punch! Add the chicken to a bowl, and add the Buffalo Hot Wing sauce. Toss to coat. These bites should be looking (and smelling) amazing by now.

Only thing that's left to do is build the nachos! In an oven-safe tray, cover each tortilla (or chip) with beans, cheese, Jalapenos, and some of the coated buffalo wing pieces.

Now place the tray in the oven, and let it go at 375ºF (191ºC) until the cheese is melted and bubbly.When ready, remove from the oven and add Ranch dressing to your preference.
